Spicy Peanut Sauce with Shredded Carrots

Here is a simple and easy to make sauce that you can use in a plethora of ways.  I decided to mix it up with some leftover shredded carrots I had to make some sort of random side dish.






















Spicy Peanut Sauce
3 tablespoons peanut butter
5 tablespoons water
2 teaspoons lemon juice
3 tablespoons soy sauce
1 teaspoon Sriracha (or any chili style sauce)


Mix all these ingredients together in a bowl and pop it into your microwave for 30 seconds. Done. You could use this sauce in numerous ways (over veggies or with tofu…etc).  It’d be a good dipping sauce too.  Alter the amounts for each ingredient to make more because if you’re making a big meal and want to use this recipe, you’ll probably want more sauce.  


This is my first time making the spicy version of this.  I usually make a peanut-soy sauce for pasta when I don’t feel like eating pasta the more traditional (sometimes boring) way.  I had a bag of shredded carrots that I wanted to use and decided this sauce would jazz ‘em up.




























I mixed the sauce to coat the carrots and then put it in the refrigerator to chill.  I like it.  It’s clearly a really easy recipe to make and it’s very flavorful.  If you like peanut butter, then this sauce is your boy.
