What's this all about?

Welcome to my first post!  I had an idea to start documenting and writing about various happenings, experiences, and thoughts in my life.  That seemed too overwhelming and non-specific to start off with, so my new plan is to concentrate mostly on food and libations.  Life in Philadelphia is good for a lady who likes to eat and drink.  I also like to attempt to cook, and that is what I am starting off with today.  Keep in mind, most of the food I make and eat will be vegan/vegetarian because that’s usually how I like to roll with food.  Alright, let’s get to it. Spicy Roasted Chickpeas
1 can chickpeas
1 tablespoon extra virgin olive oil
salt, pepper, oregano, dried red pepper flakes


These are super easy to make and go perfect on top of a salad or even as a snack.  I already ate them on top of my salad at lunch, and I am currently eating every last chickpea that was left over after that. No chickpea left behind. 

All you have to do is drain and rinse the chickpeas, lay them out to pat them dry with a paper towel, and place them into a bowl.  Add the olive oil and seasonings and then mix it all up.  Place the chickpeas on a baking sheet and into a 400 degree oven.  Let them roast up in there for about 30-40 minutes (until they are crunchy) and that’s it.  I like doing this because you can season it differently every time.  I’ve made cumin flavored ones before that were awesome and there’s no doubt in my mind that garlic ones would also be great!
